However, no matter the changes in flavors, colors and design styles, all the creations of the Institute follow its main principle: to preserve the traditions and not to use any artificial additives or stimulants. The products are created from organic components only, using natural fermentation. All the design efforts by the Institute of Mead Brewing are directed towards the harmonious combination of the old and the new. The modern technological process allows for the preservation of the "natural" production and at the same time to enrich the recipe collection with new, original and modern ideas.

The Mead Brewery Lab applies its developments to practice in the Medovarus Workshop of honeymaking and cidermaking at two production sites: in St. Petersburg and in Pushkin, as well as at other production sites in the European area of Russia.
